Power Balls
I think everyone has their favorite version of this recipe & today I thought I would share ours! I love having a bunch of these made up & ready to go. We roll them into balls & then flash freeze them & put them in large ziploc bags in the freezer. Whenever we want some, we just grab a couple out & let them thaw for a few minutes & they are good to go! Bethany & Avery love having these for breakfast, as a dessert in their sack lunch or as a snack before dance or a game. They are *somewhat* healthy & super filling!
2 c. oatmeal
1 c. peanut butter
2/3 c. honey
1/2 c. flaxseed
1 c. mini chocolate chips
Combine & roll into balls. It's that simple! Well I say it's that simple but honestly they are kind of a pain to mix up. I like to put the first 4 ingredients in the kitchen aid & then add the chocolate chips at the end. We typically make 3-4 batches of this at a time because once you get started why not? Store in freezer or refrigerator.
