Sara's Creamed Corn
You guys, this creamed corn is THE ABSOLUTE BEST! It's the side dish that I'm always requested to bring for large family gatherings. It's perfect for Thanksgiving, Christmas & Easter. Since it cooks in the slow cooker, you don't have to worry about it taking up precious stove or oven space. Bonus- it's super easy!
5 lbs. frozen sweet corn
2- 8 oz pacakges cream cheese
1 stick butter
3/4 c. heavy whipping cream
4 T. sugar
1 t. black pepper
1/2 t. salt
Combine all ingredients in slow cooker & cook on high 2-4 hours or low 4-6 hours. It's absolutely fine to let it cook shorter or longer just as long as the cream cheese has a chance to melt. I do think it's better the longer it goes though. It reheats very well, making for delicious leftovers!
