Tailgate Quesadillas

A big hit at our tailgates has been these tailgate quesadillas that my dad makes! He kind of mixed a few recipes & came up with his own.
When he makes it for games, he uses 10 lbs of ground beef. So that is what I am going to base things on, but you can do the math & make it be whatever size you need it to be to feed your crowd.

Ingredients:

  • ground beef

  • taco seasoning

  • refried beans

  • tomato paste

  • shredded cheese

  • tortillas

  • toppings of your choosing

Directions:

Brown 10 lbs of hamburger with 5 packets of taco seasoning. Stir in 2 cans of refried beans & 2 (6 ounce size) cans of tomato paste. Add 3-4 cups of shreded cheese & stir all together. Put it in the crockpot to keep warm until ready to cook.

Cook on a blackstone. He uses olive oil & adds 3-4 scoops of the taco meat & sprinkles with more shredded cheese.

Once the cheese starts to melt, close them up & cook until browned & melted.

We like to cut them small so people can just grab them & eat while standing!
