what I'm eating this week...
I'm trying to do a better job of meal prepping because this always leads to making better choices for me! One of my biggest struggles is breakfast. I don't usually have even a second to spare in the mornings so I need something that I can make the night before & eat when I get to school. I'm a big fan of overnight oats -- most of the recipes I've found are not so healthy, but I found one last week & tweaked it a little bit & I'm loving it. Any chocolate lovers out there? What about fruit? What about fruit covered in chocolate? This may be the overnight oats recipe for you!
berry + chocolate overnight oats recipe:
1/4 cup rolled oats
2/3 cup raspberries / strawberries (I use fresh, but I'm sure frozen would be okay too)
1 Tbsp. flax seed
1/3 cup almond milk
1 Tbsp. nutella or chocolate chips
I got a set of 12 wide mouth mason jars from Amazon so that I can make a few of them at a time & just stick them in my fridge. The nice thing about the wide mouth is that it makes cleaning them a lot easier!
what I'm reminiscing about...
My sister, Bethany, is currently a junior in high school & she's started the process of figuring out where she's going to go to college & what she wants to study. Working through this season with her has been really interesting because I find myself telling her all the things I wish someone told me -- start training for a marathon now so that you can be sure to make it all the way across campus in ten minutes or make sure you learn EXACTLY how mom does the laundry because the simplest things will make you feel at home or no, money isn't everything, but make sure that in four years you'll really be okay with having so much debt that the numbers BEFORE the comma are more than your age.
Looking back on the last five years is truly bittersweet. From getting my undergraduate degree in Social Work from K-State (just graduated in May so I'm barely a real adult) to starting my graduate degree in School Counseling from Fort Hays to accepting my first School Counseling job at none other than a middle school from my hometown's league, I see a consistent theme: God is good. Now I'm not saying that it was always sprinkles & butterflies, because I definitely had my fair share of broken seasons, but throughout it all, God was good. He had a wonderful plan for me in mind all along, even when I couldn't see it or didn't believe it.
PS - which hair trend was your fav? Lol I've clearly had them all. Thank goodness I don't have a pic of a monumental moment when I had bleach blonde hair & bangs. Been there, done that, should never go back.
what I'm loving...
Recently, these darling car air fresheners came in the mail & you could say I’m a bit obsessed! The company that makes them is called Funky Freshies (how cute!) & they’re seriously awesome. The peace sign is glittery black / very dark purple in the scent ‘put a spell on you’. The sunglasses are glittery black in the scent ‘butt naked’. You guys. They smell SO. GOOD. I put the peace sign in my car & am saving the sunglasses for warmer weather! How fun to have your car smell like a dream & look super cute too! After seeing how much I love mine, I’m thinking these will be a super fun gift for birthday presents & probably even Christmas next year.

what I'm watching / reading...
Big fan of 'To All The Boys I've Loved Before' Netflix movie right here! I just relate a lot to the main character, Lara Jean. She's a bit of a control freak & literally made the guy sign a contract stating rules for their "fake dating relationship". Plus, Noah Centineo isn't too bad on the eyes, if you know what I mean. ;) Earlier this year I read the second book in the series of three and thought I would really enjoy it since I loved the first movie. Overall, I really enjoyed the book, but the first half was pretty much what happened in the first movie so it was hard to get into at first. Then when I heard that the second book's movie was coming out, I was stoked! I really enjoyed the second movie, but I actually liked the book's plot better which was WAY different! So interesting. Anyways, if you're needing a good book OR a movie, I highly recommend the 'To All The Boys I've Loved Before' series. I think these were written / made for adolescents, but nobody puts baby in a corner. I am not ashamed to read a cheesy love story!
what I'm listening to...
So I've been a J Biebs fan since I was probably like 12 so of course when he releases a new album, I'm here for it. He may be covered from head to toe in strange tattoos & constantly lookin' like he needs a good shower, but he'll always be J Biebs in my eyes.
This song is my favorite from his new album. It's just such a jam! Plus it kind of hypes me up. It's a regular on my drive-to-school-gotta-get-pumped playlist. My favorite line is:

what I'm wearing...
Lol first of all, do I have a go-to pose for mirror pics or what?!
I posted some pictures of these henley long sleeve shirts in my post on Friday & I'll be sharing more about them tomorrow, but I've been wearing the heck out of them lately so it's worth sharing. They are stinkin' soft & perfect for spring weather because they're pretty thin too. The buttons down the front are functional which is nice because you get to decide how open you want it to be -- I'm a one or two buttons open at the top kind og girl, but do whatever you feel comfortable with! They look great with joggers, jeans, & shorts too -- I love that they're so versatile! They come in a light grey & a blue color as well. They're 25% off making them less than $30 right now!
The other piece of clothing I've gotten a lot of wear out of on the occasional warm day is this black jumpsuit! You guys it feels like I'm wearing pajamas & I'm all about that!! It has a functional drawstring so you can leave it loose or pull it in to really accentuate your waist. I love how casual it is & it looks great with a jean jacket & sandals! I'm wearing a size medium because I didn't want it to be super fitted & tight, I wanted it to be a looser fit because I knew I'd be more comfortable that way. I'd recommend sizing up if you want a looser fit, or getting your true size if you're okay if it's a little bit more fitted -- to each their own. Can't wait to wear this even more as the weather continues to warm up!

what I'm dreading vs. what I'm excited about...
There's not really anything in particular that I can think of that I'm dreading right now. But I am super ready for the spring weather to fully take over! I'm definitely one that loves the cold winter months, but I'm ready for some spring days & to be able to be outside more! Plus, my school's spring break is in about 1.5 weeks so I'm very excited for that, too! Hoping we'll have some beautiful spring weather by then!
